About the estate
The Ollier-Taillefer estate is located in the south of France in the north-east of the Faugères appellation in the Languedoc region, managed by the siblings Luc and Françoise Ollier as the fifth generation and joined by Florent Ollier in 2020. The history of the enterprise dates back to 1977 when the first bottles were commercialised. The property spans 36 hectares of vineyards situated on steep slopes with schist soils, cultivated according to organic farming principles with official certification. The traditional grape variety assortment consists of Grenache Noir, Carignan Noir, Syrah, Mourvèdre, and Cinsault for red and rosé wines, alongside Roussanne and Rolle for white wines. Harvesting is carried out manually with careful sorting before gentle, gravity-assisted vinification in the cellar.
