The L'Enclos des Songes estate cultivates 1.8 hectares of vineyards on the initial slopes of the Gaillac terroir in Couffouleux in southwestern France. As independent winemakers, the producers engage in strictly artisanal and organic viticulture, relying on hand harvesting and avoiding modern cellar technology. Vinification takes place in small batches to craft distinctive wines, including three reds and two rosés under the IGP Côtes du Tarn and Vin de France designations. The wines are aged for extended periods on their lees to develop an independent and nuanced style.
