Domaine de la Patelle

About the estate

The Domaine de la Patelle estate was established in 2021 by Pascal Théreau in Arbois and covers just over six hectares of vineyards. Following training in Beaune and experience in the Jura region, the former wood professional shifted his focus to organic viticulture. The vineyards are distributed across diverse terroirs, including the limestone plots of Les Tourillons as well as the clay and red marl soils of Les Bodines. Cultivation follows strict organic standards without chemicals, complemented by biodynamic practices and manual harvesting. In the cellar, the winemaker adopts a minimal-intervention approach featuring spontaneous fermentations with indigenous yeasts and a reduced use of sulfites.
