About the estate
The Ilaria Salvetti winery cultivates vineyards on the morainic hill of Caluso in Piedmont, surrounded by forests and overlooking Lake Candia. The vines are managed using the Guyot training system on soils characterized by high levels of skeleton and sand, low clay content, and an acidic pH. The estate combines modern agronomic practices with ancient knowledge to tend the vineyards respectfully and address climatic challenges. The portfolio includes Caluso DOCG and Piemonte DOC wines, featuring a Passito produced from selected Erbaluce grapes dried naturally on reed racks. Following a spontaneous fermentation, this sweet wine is aged in used oak barriques for at least three years.
