About the estate
The Domaine Jean Pabiot & Fils estate is managed within the Pouilly-Fumé appellation by Alain and Jérôme as sons and grandsons of Jean Pabiot. Spanning 42 hectares across 40 plots situated in five communes, the vineyards are exclusively planted with Sauvignon and Sauvignon blanc. The soils consist primarily of clay-limestone terroirs, including caillottes, marl with small fossilized oysters, and flint. The winery is committed to sustainable agriculture and holds certifications for Terra Vitis and Haute Valeur Environnementale. For the production and ageing of its wines, the estate utilizes a subterranean cellar dating back to the 19th century, featuring eight distinct galleries connected starting in 1947.

Nez très expressif autour de notes florales (Lilas blanc), fruits blancs (pêche) et fruits exotiques (ananas). Bouche riche, minérale, légèrement crayeuse et une finale saline très élégante.
