About the estate
The Domaine Jonathan & Didier Pabiot estate is located in the small village of Les Loges and spans twenty hectares of vineyards in the Pouilly-Fumé appellation. The vines are planted on steep slopes and terraces characterized primarily by limestone, caillottes, and terres blanches soils. The estate has practiced organic farming since 2006 and received biodynamic certification in 2016. Great attention is dedicated to manual vineyard management, preserving surrounding nature, and maintaining biodiversity. Winemaking is conducted with a minimal intervention approach aimed at respecting the fruit and expressing the distinct minerality of the terroir.
