Domaine Hivernaty

About the estate

The family-run Domaine Hivernaty estate is situated between Nîmes and Montpellier on silty clay-limestone and sandy soils, with a history dating back to 1792. The vineyard spans nearly 60 hectares, cultivating grape varieties such as Grenache, Cinsault, Carignan, Merlot, and Cabernet Sauvignon. The winery refrains from using chemical weed killers, relying instead on mechanical soil work and using almost exclusively sulfur, Bordeaux mixture, and bio-control products to manage diseases. Its wines are certified under the IGP Pays d'Oc denomination. Vinification takes place at the Mas Saint Blancard cellar under the direction of Julie Guillierme, who leads the estate following in the footsteps of her ancestors.
