The Domaine Barillot Père & Fils estate manages eleven hectares of vineyards in the heart of the Pouilly-Fumé and Pouilly-sur-Loire appellations. The winery produces ninety-five percent Pouilly-Fumé from the Sauvignon grape variety and five percent Pouilly-sur-Loire from Chasselas. Cultivation follows a biological approach aligned with the lunar calendar. Winemaking methods include manual harvesting, the use of indigenous yeasts, and minimal sulfur additions. The production is spread across roughly ten distinct terroirs.
