About the estate
The Fattoria San Vito has been operating as a family-run winery in Calci, Tuscany, since 2011. The estate is dedicated to producing natural wines while strictly following organic farming protocols. In the vineyards, synthetic chemicals are avoided entirely, relying instead on natural treatments such as copper, sulfur, propolis, and algae. Harvesting is done exclusively by hand, leading directly into spontaneous skin-contact fermentation without the addition of commercial yeasts. For the maturation of the wine, the estate utilizes stainless steel and concrete vats while completely omitting filtration.
