About the estate
The Giovanni Sallemi estate looks back on a family history deeply rooted in viticulture, shaped by founder Francesco and the current owner. The four-hectare vineyard is located in Granieri, a hamlet of Caltagirone, situated on a south-facing hillside at an altitude of 350 meters. The soil consists of clay and sand, where varieties such as Nero d'Avola are cultivated. The managed vineyards are organically certified, using exclusively natural products such as sulfur, copper, and sheep manure in the fields. Winemaking follows traditional methods with manual harvesting, spontaneous fermentation with indigenous yeasts in concrete vats, and aging for several years in old oak barrels or steel tanks.
