About the estate
The Domaine les Païssels estate is located in Babeau near Saint-Chinian on schist slopes. Founded by two agricultural engineers and oenologists, the winery currently farms a vineyard area of 15 hectares under organic agriculture. The vineyards comprise many old bush vines as well as new plantings in cooler locations to produce balanced wines. Traditional bush vine cultivation combined with the draining schist soils shapes the character of the wines. The grape variety spectrum includes major blends in Saint-Chinian alongside rediscovered varieties such as Gibi blanc and Petit Bouschet.
