About the estate
The Cavas Rovellats company is located in Sant Martí Sarroca on a historical estate featuring medieval buildings dating from the tenth to the fifteenth century. The origins of the property are documented back to 1303, while cava production began in the early twentieth century under Josep Vallès Rovira. Today, the third generation of the family manages the traditional and organically certified winery. The estate cultivates fifty hectares of its own vineyards surrounding the property with an average yield of seven thousand kilograms per hectare. Vinification is carried out exclusively from estate-grown grapes, with a strong focus on extended aging periods and continuous technical innovation.
