About the estate
The OENO P winery was established in 2021 by experienced winemaker Paris Sigalas on the Greek island of Santorini. The estate focuses on the limited production of terroir-driven wines from the indigenous Assyrtiko variety as well as other native grapes. The vineyards benefit from the unique volcanic soil consisting of ash and pumice, combined with the Mediterranean climate of the Cyclades. Traditional vineyard management involves the ancient basket-shaped pruning technique to protect the grapes from strong winds and intense sunshine. In the cellar, the winery relies on low-intervention winemaking utilizing large-volume amphorae, natural fermentation, and no filtration.

Pithari comes from a carefully selected vineyard that contributes to the Tria Ampelia blend. Fermentation was carried out with indigenous yeasts, finishing with a hint of residual sugar, and the wine rested on its lees for 16 months.
