Pazo San Mauro

About the estate

The Pazo San Mauro estate is located in the Rías Baixas region and traces its history back to the construction of the historic mansion in 1591. The winery manages 30 hectares of vineyards with an average vine age of 35 years, sloping down towards the Miño river. The terroir is characterized by an ancient granite subsoil and an exceptional Atlantic-influenced microclimate. Harvesting is carried out entirely by hand on a plot-by-plot basis, followed by prompt cooling and diverse vinification techniques depending on the grapes. After bottling, the wines are aged in the bottle for an additional six months before release.
