About the estate

The Iacopo Paolucci Cantina e Vigneti estate located in Monte Castello di Vibio in Umbria stems from the entrepreneurial initiative of the young oenologist Iacopo Paolucci. Following practical experience in prominent wineries across central Italy, he established the enterprise near Todi featuring a new cellar and vineyards. The organically certified vineyards are situated at an altitude of 500 meters and focus on producing typical wines from native grape varieties such as Grechetto, Trebbiano Spoletino, Verdello, and Grero. Cultivation is conducted without systemic treatments, chemical fertilizers, and herbicides, while the harvest is carried out exclusively by hand. In the cellar, the winery relies on spontaneous fermentations using indigenous yeasts, avoids chemical additives except for low doses of sulfites, and foregoes fining or sterile filtration.
