The Bodegas Romero de Ávila Salcedo estate located in La Solana, Castile-La Mancha, crafts wines under the La Mancha DO denomination. The winery implements regenerative viticulture practices, avoiding synthetic chemicals and focusing on soil fertility, biodiversity, and ecosystem resilience. Cultivated entirely under strict dry-farming conditions, the vineyard features limestone, sandy-loam soils with clay and abundant pebbles. The extreme climate, characterized by hot days and cool nights, shapes the character of the vines as they develop deep root systems. Furthermore, the estate preserves the traditional method of vinification in clay vessels to capture the pure expression of the terroir.
