Bodegas Bhilar, S.L. is a boutique winery located in Elvillar in Rioja Alavesa, run by the husband and wife team David Sampedro and Melanie Hickman. The founder began his journey in 1999 with three hectares of vines and subsequently converted the estate to organic and biodynamic viticulture. Vineyard management relies on natural principles, including the use of horses for ploughing instead of tractors. In 2016, the estate built an eco-conscious, partially underground winery powered by solar and wind energy, utilizing concrete tanks for fermentation. The winery focuses on producing unique wines that reflect their origin through minimal intervention.
