The Domaine Guillerault-Fargette - Caves du Prieuré estate is managed by Gilles Guillerault and Sébastien Fargette and cultivates a total of 17 hectares of vineyards in the AOC Sancerre. The winery began its conversion to organic farming in 2019. Sauvignon Blanc and Pinot Noir are planted on limestone, stony, and clay-limestone soils, alongside a small plot of Viognier. The vineyards feature natural cover crop management and no insecticides. In the cellar, the wines are crafted to express the minerality of the soils and the character of their origin.
