Founded in 1929 by José Gilar Jiménez, the Bodegas Fermín Gilar family estate is located in the heart of Jumilla. Spanning four generations, the family manages the winery with a primary focus on producing wines from the indigenous Monastrell grape variety. Over the course of its history, various expansions have increased the winery's total capacity to two million liters. The cellar features a range of vessels, including wooden conical vats, oak barrels, and modern stainless steel tanks.
