The Zýmē di Celestino Gaspari winery was founded in 1999 and is located in San Pietro in Cariano in the Veneto region. The estate cultivates a widespread mosaic of vineyards that extends from the classic Valpolicella zone through the areas of Soave and Durello to the Berke Hills. Environmental sustainability, respect for natural rhythms, and rigorous grape selection are central to the work in the vineyard and cellar. The wines reflect the diverse soils and microclimates of this broad terroir. The winery itself is housed in a sandstone quarry in the heart of Valpolicella.
