The Vinařství U Kostela estate in Polešovice historically follows the work of Cistercian monks who established the first vineyards there in 1454. Today, modern wines are created from traditional grape varieties thriving in various sites such as Nové hory, Staré hory, and Míšky. The vineyards benefit from a distinct microclimate influenced by the Chřiby mountains and the Morava river, with terroirs ranging from sandy alluvial soils near the bottom to heavier soils with marl and slate at higher elevations. The estate building is located in the center of Polešovice in the shadow of the local church and features historical vaulted cellars.
