The Enoturismo Dofinè estate in Due Carrare was established in 2012 when Nicoletta and Riccardo took over management following the retirement of grandfather Toni. The project is guided by ten ethical principles, incorporating comprehensive environmental sustainability measures and SQNPI certification. Vineyard work involves manual harvesting, and cultivated grape varieties include Glera for Prosecco, Raboso Piave, and various other white and red varieties. The wines are crafted in a modernized winery using methods such as the Charmat technique for sparkling expressions.
