Domaine Holvast

About the estate

Located in Asse within the Pajottenland, the Domaine Holvast estate was founded in 2001 and cultivates grape varieties such as Chardonnay, Pinot Noir, Regent, Sirius, and Merzling. The vineyards feature soils composed of sand, loam, and mineral-rich clay with predominantly southern exposures. Vinification is primarily conducted in stainless steel tanks, occasionally supplemented by French oak barrels for red wines and extended lees aging for sparkling wines. The product portfolio includes still white, rosé, and red wines alongside distinctive sparkling wines influenced by wild yeasts and controlled secondary fermentations.
