The Domaine Colbois estate is managed in the fourth generation by the Colbois family, who have cultivated vines since 1900. The 20 hectares of vineyards are located in the municipality of Chitry le Fort and in the Chablis region. The grape varieties used include Chardonnay, Aligoté, and Pinot noir. To maintain the vineyards, the winery relies on mechanical soil cultivation, limited phytosanitary treatments, and debudding to restrict yields. Vinification and aging take place primarily in temperature-controlled stainless steel vats, with selected cuvées being aged in oak barrels.
