The Champagne Bonnet-Ponson winery is located in Chamery in the Champagne region and produces wines under the AOC Champagne denomination. In the cellar, the approach aims to reveal the identity of the terroirs in the purest and most direct way possible. The estate works exclusively with indigenous yeasts and relies on patient and gentle vinification. The wine is aged on total lees for nine to ten months, while additives are reduced to a strict minimum. Furthermore, the dosage is omitted to allow for a sincere and precise reading of the terroir.
