The Champagne Ayala estate was founded in 1860 by Edmond de Ayala in Aÿ and is recognized as a pioneer of drier styles in the region. The winery farms 22 hectares of vineyards across emblematic villages and collaborates closely with numerous grower families. Winemaking places a strong emphasis on Chardonnay, defining the elegant and pure character of the cuvées. Alongside traditional craftsmanship, the estate focuses heavily on sustainability and the ongoing transition to organic farming. All wines are produced under the AOC Champagne denomination, reflecting the diversity of the local terroirs.
