The Cembra Cantina di Montagna cooperative in Trentino manages vineyards situated at altitudes between 500 and 900 meters, making it one of the highest wineries in Italy. The steep vineyard parcels with gradients exceeding 40 percent require intensive manual labor along the slopes of the Cembra Valley, which are characterized by elaborate dry stone walls. The vines take root in volcanic porphyry soils that impart a distinct minerality and vibrant freshness to the wines. Cultivated grape varieties include Müller Thurgau, Chardonnay, and Riesling Renano. Harvesting is done by hand, followed by vinification in the cellar, where the wines are aged in stainless steel tanks or small oak barrels depending on the style.
