About the estate
The Swiss winery Cave du Chevalier Bayard is located in Varen in Valais and has been run as a family business since 1975, with the third generation taking over management in 2012. The vineyards are situated on a sunny south-facing terrace with poor, calcareous soils above the Pfynwald forest. Since 2014, the vineyards have been cultivated in accordance with organic farming guidelines. During vinification, emphasis is placed on authenticity by allowing spontaneous fermentation whenever possible and minimizing additives. The portfolio includes various quality wines under the AOC Valais denomination, some of which are aged in oak barrels.
