Über den Betrieb
Das Weingut Domaine de l'Enclos bewirtschaftet 36 Hektar Rebfläche in ökologischer Landwirtschaft mit Ecocert-Zertifizierung auf den vier Appellationen von Chablis sowie seit 2023 im Norden der Burgund. Geleitet wird der Betrieb von den zwei Brüdern Romain und Damien gemeinsam mit ihrem Team. Die Arbeit im Weinberg erfolgt manuell und naturnah, ergänzt durch biologische Düngemittel und den Verzicht auf synthetische Pflanzenschutzmittel. Die Vinifikation findet in einem 2016 errichteten Gravurkeller mit Edelstahltanks und in der historischen Gewölbekellerei statt. Dabei wird ohne künstliche Zusätze und mit spontanen Hefen gearbeitet, während der Vertrieb international und national über zahlreiche Distributoren erfolgt.
Im eno-Verzeichnis sind 13 Weine erfasst. Der Betrieb beliefert Distributoren, Gastronomie und Handel.
