About the estate
The Sotomanrique winery was founded in 2012 in Cebreros by Chuchi Soto after years of involvement in various national and international wine projects. The estate cultivates around 20 hectares of vineyards consisting of old mountain plots situated on granite and slate soils. The primary grape varieties grown are Garnacha and Albillo Real, located at altitudes ranging between 650 and 1100 meters. The production approach features organic viticulture, hand-harvesting in small boxes, and minimal intervention in the cellar with spontaneous fermentations. For vinification, the team utilizes stainless steel tanks, concrete vats, large wooden casks, and fudres.
