About the estate
The La Cave Apicole estate was founded in 2007 in the Agly Valley by Sylvain Respaut, who initially settled there as a beekeeper. He later took over old hillside vines, converted them to organic farming, and partnered with Olivier Cros to produce natural wines. The two winemakers operate from the former cooperative cellar in the village of Montner within the Fenouillèdes terroir. Together, they produce fruity and light natural wines, as well as natural mead and wildflower honeys.
