The Domaine de l'Ouche Gaillard winery was founded in 2008 by Gabriele and Régis Dansault and is located in Montlouis-sur-Loire. Since 2010, the entire estate has been certified organic. Operations follow the rules of organic viticulture in both the vineyard and the cellar. Harvesting is done by hand for grape varieties such as Chenin, Cabernet, Gamay, Côt, and Pineau d'Aunis. The vinification process relies on indigenous yeasts and minimal additives to reflect the natural character of the wine.
