The azienda agricola cantina Giara estate is a small family-run winery located in Adelfia in Apulia, with a history tracing back to the late 19th century. The vineyards are situated at an altitude of 231 metres above sea level on tuffaceous, limestone-clay soils in the Jazzo di Stefano and Lama Baronale areas. The cultivated grape varieties include Primitivo, Verdeca, Malvasia bianca, Greco, Fiano, and Moscatello selvatico, all farmed using biodynamic methods and harvested entirely by hand. In the cellar, vinification relies on spontaneous fermentation with indigenous yeasts, completely avoiding synthetic chemistry, fining, or filtration. The portfolio consists of natural red wines, white wines crafted as orange wines, and rosé wines.
