About the estate
The Deppisch winery operates as a Demeter-certified estate following biodynamic guidelines. In the vineyard, the team completely refrains from chemical-synthetic crop protection and fertilizers, relying instead on composted humus and diverse cover crops to ensure a healthy soil. Low yields and gentle processing result in complex, multi-layered wines. All wines are vinified without the use of fining or treatment agents, relying exclusively on natural spontaneous fermentation driven by the yeast flora present on the grapes.
