The Bodegas Lustau winery was founded in 1896 by Don José Ruiz-Berdejo in Jerez de la Frontera and initially operated as an almacenista. The estate's vineyards are characterized by the distinctive chalky albariza soil and benefit from around 3,000 hours of sunshine each year. The cultivated grape varieties include Palomino, Moscatel, and Pedro Ximénez. The company ages its wines in historic buildings located across the three towns of Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda. The production relies on traditional solera systems to craft a diverse range of sherry specialties.
