The winery follows a sustainable and low-intervention agricultural approach that goes beyond organic certification, avoiding herbicides and minimizing copper and sulfur use. Harvesting is carried out entirely by hand to ensure careful selection of the grapes. In the cellar, vinification relies on spontaneous fermentations, no filtration, and minimal sulfites added at bottling to produce authentic wines.
