The Manuel Muñoz (Los Patata) estate located in Navalcarnero produces wines under the Vinos de Madrid DO denomination. The close proximity of the vineyards to the winery, combined with manual harvesting, ensures the grapes arrive at the facilities in an excellent sanitary state. After destemming, the various grape varieties are fermented separately in stainless steel tanks under controlled temperatures with daily pump-overs. Maceration times depend on the intended final destination of the wine, with barrel-aged wines being transferred to 225-liter French oak barrels.
