The Champagne Philippe Fays estate is located in Celles-sur-Ource in the heart of the Côte des Bar and looks back on a history spanning three generations. The family winery was established in the 1970s by André Fays, following his father Jean Fays who originally cultivated the vineyards. Since 1985, Philippe Fays and his wife Laurence have managed the property, which covers four hectares of vines. The team applies rigorous and careful attention to every single vineyard parcel in order to produce authentic champagnes that express the character of the estate's terroir.
