The Ibero Winery estate manages five hectares of vineyards planted equally with the local grape varieties Rkatsiteli, Khikhvi, Kisi, Kakhuri Mtsvane, and Saperavi. Cellar operations rely on traditional Georgian winemaking, featuring fermentation in clay vessels called Qvevri and aging on full grape must. The production portfolio includes single-varietal Qvevri wines, fortified wines, and different styles of Chacha. The winery is operated by the Natroshvili family.
